Malai Barfi

Malai Barfi

Malai Barfi is one of most favourite sweets in most parts of India. Malai literally means cream and barfi can be similar to fudge or soft flapjack. This sweet is made from milk solids and sugar. It has a soft but granular texture. Traditional recipe takes quite long to prepare but this version makes it comparatively very quick and with very few ingredients that are readily available.


There are 2 main components in Malai Barfi


Paneer / Chenna

Paneer is Indian cottage cheese. It's made by curdling the milk.
It's used in array of recipes. In this recipe I am using freshly made paneer in the crumbled form.


Khoya

Khoya is made by slowly evaporating the milk into milk solids. It is very popular ingredient used in many Indian savoury recipes as well as in milk based sweets. Traditional khoya making is a lengthy process. It's readily available in shops in India. However, I am using a quick method to make fresh khoya using just milk and milk powder.

Milk

Vinegar

Ingredients for Khoya

Ghee

Milk

Milk Powder

Other Ingredients for Barfi

Sugar

Cardmom Powder

Saffron

Pistachios

Almonds

Directions

Directions for Paneer / Chenna

Bring milk to boil.

Add vinegar and stir it well.

Keep it on medium heat for a couple of minutes so that whey gets separted.

Strain it using muslin cloth.

Rinse it few times to eliminate the smell of vinegar.

Gently squeeze the water and keep it aside for 10-15 minutes.

Directions for Khoya

Heat pan add ghee and then milk.

Heat for a minute on medium heat and then slowly add milk powder. Keep mixing while adding milk powder.

Keep stirring and continue for 5 minutes till mixture almost becomes dry and it starts leaving the pan. Keep it aside to cool.

When its cooled down break the lumps and you will get crumbly textured khoya ready to use.

Directions for Barfi

Add crumbled khoya in a pan.

Add sugar and keep mixing.

Crumble the paneer to get rid of any lumps.

Add this paneer to the pan and keep mixing on medium heat till it all mixes well and starts leaving the pan. Add cardamom powder and mix well.

Malai Barfi is all ready to set.

Greased baking dish and add the barfi mixture into the dish.

Flatten the top and garnish with saffron strands and chopped pistachios and almond silvers.

Gently press the garnish gently.

Cover it and set it in the refrigerator.

When set cut into pieces and enjoy.
