Batata Vada
In this recipe, vada is made from potatoes and called as ‘Batata vada’. Batata means potato and vada is a deep fried patty. Batata Vada is a deep fried patty made from potato dipped in gram flour batter.
Batata vada is a very popular snack. It is served hot with green chutney / garlic chutney powder / tamarind chutney / tomato ketchup and also with fried green chillies.
Vada paav is also called as a Indian burger. Generally called poor man’s burger but due to its irresistible taste you will find people from all strata enjoying this vada pav. It is the most popular street food served in Maharashtra especially on the streets of Mumbai.
To make vada paav, cut dinner roll / bap / hamburger bun into half (do not separate into 2 pieces), place hot vada in between two halves, top with garlic chutney and / or green / tamarind chutney.

Ingredients
Gram flour
Rice flour
Onion
Potatoes
Green chillies
Garlic
Ginger
Lemon juice
Coriander
Salt
Chilli powder
Turmeric powder
Soda bicarb
Cumin seeds
Mustard seeds

Directions
Directions for batter
Sift gram flour to make smooth batter.
In a big bowl, add all the dry ingredients.
Slowly add water while mixing to make the batter of medium consistency.
Directions for stuffing
Peel potatoes and roughly mash them.
In a pan heat oil on medium heat. Add mustard and cumin seeds. When they splutter, add green chillies, ginger and garlic. Sauté for a minute.
Add onions and sauté until translucent.
Add turmeric powder and asafoetida, cook for a minute.
Add mashed potatoes, salt and sugar. Mix well.
Cook further for a couple of minutes.
Add peanut powder, lemon juice and coriander. Mix well. Keep aside.
Directions for Vada
Divide stuffing into approximately 16 portions.
Make round balls of each portion or shape them to make a patty like a burger patty.
Heat oil for frying in a pan on medium heat.
Dip each patty in batter. Make sure entire patty is covered with batter.
Carefully add to the oil. Deep fry till vada turns golden brown.
Drain on a wire rack or paper towel to get rid of excess oil.
Serve hot with garlic chutney, green chutney and fried green chillies.
